This takes about 35 minutes to prepare and cook but if you make enough for the week ahead it will save you time on those busy mornings, all you need to do is splash on your favourite plant-based milk and tuck in. Stored in an airtight container, will keep it fresh for around 5 days.


   2 cups rolled oats

   1 cup almonds

   1/2 cup dates

   1/2 cup mixed seeds

   1/4 cup goji berries

   1 tbsp desiccated coconut

   2 tbsp coconut oil

   1/4 cup maple syrup

   splash of vanilla extract

   sprinkle of cinnamon 


Eating something plant-based, wholesome and delicious can turn a good day into THE BEST DAY!


* Heat oven to 160ºC

1) Chop the almonds

  2) Melt the coconut oil

  3) Place all ingredients in a mixing bowl and combine

  4) Spread evenly on a baking tray

   5) Bake for 25 minutes (stirring half way)
